My favourite thing to do in the Autumn is bake cookies. Usually, I bake while listening to Taylor Swift, but that part’s optional (I suppose). This recipe has been one of my favourites to bake since I was a child, and I’ve adapted this recipe from an old children’s farm cookbook that I have hidden away in my childhood book collection. These cookies are the BEST, you guys! White chocolate chips? Check. Plenty of cinnamon? Double check. These cookies have it ALL, and I promise you’ll be as obsessed with them as I am.
So let’s get to it, shall we? We both know you’re here for one reason and one reason only: COOKIES.
75g light brown sugar
75g golden caster sugar
1 medium egg
1/2 tsp cinnamon
1/4 tsp ginger
1 tsp vanilla extract
180g plain flour
½ tsp bicarbonate of soda
150g white chocolate chips
- Mix the butter and sugars together until fluffy, then mix in the egg and vanilla. Once combined, stir in the flour, bicarb, spices, white chocolate chips and ¼ tsp salt.
- Scoop the mixture onto a parchment covered tray and bake for 12 minutes on gas mark 4 / 180c. They will harden as they cool.
It’s as easy as that!
