Autumn Spice Chocolate Chip Cookies Recipe

My favourite thing to do in the Autumn is bake cookies. Usually, I bake while listening to Taylor Swift, but that part’s optional (I suppose). This recipe has been one of my favourites to bake since I was a child, and I’ve adapted this recipe from an old children’s farm cookbook that I have hidden away in my childhood book collection. These cookies are the BEST, you guys! White chocolate chips? Check. Plenty of cinnamon? Double check. These cookies have it ALL, and I promise you’ll be as obsessed with them as I am.

So let’s get to it, shall we? We both know you’re here for one reason and one reason only: COOKIES.



120g butter

75g light brown sugar

75g golden caster sugar

1 medium egg

1/2 tsp cinnamon

1/4 tsp ginger

1 tsp vanilla extract

180g plain flour

½ tsp bicarbonate of soda

150g white chocolate chips

  1. Mix the butter and sugars together until fluffy, then mix in the egg and vanilla. Once combined, stir in the flour, bicarb, spices, white chocolate chips and ¼ tsp salt.
  2. Scoop the mixture onto a parchment covered tray and bake for 12 minutes on gas mark 4 / 180c. They will harden as they cool.

It’s as easy as that!
