Today is blogtober day three! I thought, since I’ve never written a recipe post on here before, that I would share my favourite pasta salad recipe! It’s super quick and easy, with only four steps, and can be made in less than fifteen minutes – how great is that?
I’ve provided a basic list of the core ingredients, but feel free to get creative! I’m always mixing it up with tomatoes, onions, pine nuts… whatever you love, throw it in! That’s the beauty of this super simple recipe, it’s so versatile and you can adapt it to your tastes with a few additions! So let’s get to it! (Yes, this is not the best photo, but trust me: it tastes better than it looks.)
- Mild Cheddar Cheese (or stronger if you prefer)
- Tinned Sweetcorn
While the pasta is cooking, chop up the cheese and cucumber into cubes (as big or as small as you like).
After cooking your pasta and leaving it to cool until completely cold, mix in the Cheese, Cucumber, and Sweetcorn.
Add in the mayonnaise. I like to use a lot, but how much you put in depends on how creamy you want it to be. Mix until all the ingredients are fully coated.
Mix in the croutons and serve!
